One those days when I have a limited number of ingredients in my fridge is when I came up with unusual dinners for myself. This recipe is one such example. I had half a pound of ground lamb and some vegetables left at home. The easy route would be to make pasta but I wanted something different. I decided to make meatballs with the ground lamb, sauté the veggies in olive oil and serve it all together with couscous. I didn’t know if it would be any good but It turned out to be so delicious that I have decided to make it often.
Ingredients for Lamb meatballs (Makes about 4 smalls meatballs)
½ pound ground lamb
1 medium onion grated
1 tablespoon of chickpea flour (for binding)
1 teaspoon of ground cumin
½ teaspoon of ground coriander
½ teaspoon of turmeric
Salt and pepper to taste
Method
Add grated onion to the ground lamb along with the seasoning and mix it all together with your hands or spoon. Let this mixture sit in the fridge for half n hour.
Fry in a sauté pan until brown.

Ingredients for Couscous
2 cups of Couscous
½ bunch of parsley chopped
2 ½ cups of water
Olive oil
Salt to taste
Method
Add the chopped parsley to the water and bring to a hard boil. Add the couscous, olive oil and stir together and let it cook on low heat for 15 mins.
Ingredients for the sauce
Long green beans
Carrots
Bell pepper
Tomatoes
Onion diced
Salt and Pepper to taste
Oil
Method
Note: I have not specified the quantity of each ingredient because that is totally up to you. Just make sure it is all equal.
Fry onions in oil until lightly brown. Add all the veggies except the tomatoes and fry. Add tomatoes, salt and pepper and stir. Cover the pan and cook on medium-low heat until tomatoes have thickened.
